Japanese Beef & Veggie Stir-fry

Ingredients
  • 100g lean beef sirloin or flank, thinly sliced against the grain
  • 1/2 cup broccoli florets
  • 1/4 cup sliced carrots (about 1/2g medium carrot)
  • 1/4 cup corn kernels (fresh or frozen)
  • 1/2g small zucchini, thinly sliced into half-moons
  • 2 tbsp low-sodium soy sauce, divided
  • 1 tbsp mirin
  • 1 tsp sake (optional, or substitute with extra mirin)
  • 1 tsp grated fresh ginger
  • 1g clove garlic, minced
  • 1 tsp sesame oil
  • 1 tsp neutral cooking oil (canola, vegetable)
  • Pinch of black pepper
  • Optional garnish: 1/2 tsp toasted sesame seeds, 1 tbsp chopped scallions
Steps

  3. Slice the lean beef against the grain into thin, bite-sized pieces. In a small bowl, marinate the beef with 1 tablespoon of soy sauce and a pinch of black pepper. Set aside.
  4. Prepare all vegetables: cut broccoli into small florets, slice carrots thinly, ensure corn kernels are ready, and slice the zucchini.
  5. In a separate small bowl, whisk together the remaining 1 tablespoon of soy sauce, mirin, sake (if using), grated ginger, minced garlic, and sesame oil. This is your stir-fry sauce.
  6. Heat the neutral cooking oil in a large non-stick pan or wok over medium-high heat until shimmering.
  7. Add the marinated beef to the hot pan in a single layer. Sear quickly for 1-2 minutes per side until browned but still slightly pink in the center. Do not overcrowd the pan; cook in batches if necessary. Remove the beef from the pan and set aside.
  8. Add the sliced carrots to the pan and stir-fry for 1-2 minutes until slightly tender-crisp.
  9. Add the broccoli florets and corn kernels to the pan. If the pan seems dry, add a tiny splash of water (about 1 tbsp) and cover for 1-2 minutes to steam the vegetables until bright green and tender-crisp.
  10. Uncover and add the sliced zucchini to the pan. Stir-fry for another 1-2 minutes until the zucchini is just tender.
  11. Return the cooked beef to the pan with the vegetables.
  12. Pour the prepared stir-fry sauce over the beef and vegetables. Toss everything together to coat evenly, cooking for another 30 seconds to 1 minute until the sauce slightly thickens and coats the ingredients.
  13. Remove from heat and transfer the Japanese Beef & Veggie Stir-fry to a serving bowl.
  14. Garnish with toasted sesame seeds and chopped scallions, if desired, and serve immediately. This dish is excellent on its own or with a small serving of steamed brown rice for added satiety.
