Mediterranean Mushroom & Pepper Pita Pizza

Ingredients
  • 1g whole wheat pita bread (6-inch)
  • 2g tablespoons low-sodium marinara sauce
  • 1/4 cup shredded low-fat mozzarella cheese
  • 1/4 cup sliced mixed bell peppers (red, yellow, or green)
  • 1/4 cup sliced fresh mushrooms
  • 5g Kalamata olives, pitted and sliced
  • 1/4g teaspoon dried oregano
  • Pinch of garlic powder
  • Fresh basil leaves for garnish (optional)
  • Cooking spray
Steps
  1. Preheat your oven to 400°F (200°C).
  2. Lightly spray a small baking sheet or pizza pan with cooking spray.
  3. Place the whole wheat pita bread on the prepared baking sheet.
  4. Spread the marinara sauce evenly over the pita, leaving a small border for the crust.
  5. Sprinkle half of the low-fat mozzarella cheese over the sauce.
  6. Arrange the sliced bell peppers, mushrooms, and Kalamata olives evenly across the pizza.
  7. Sprinkle the remaining mozzarella cheese over the vegetables.
  8. Dust with dried oregano and a pinch of garlic powder for enhanced Italian flavor.
  9. Bake for 10-15 minutes, or until the cheese is melted and bubbly and the pita edges are lightly golden and crisp.
  10. Carefully remove the pizza from the oven.
  11. If desired, garnish with fresh basil leaves.
  12. Let it cool for a minute before slicing and serving immediately.
